Santoku 190mm Ni-maïThis Santoku (Japanese chopping knife) feature a stiff blade (cladding harden) slight belly, tall bevel with a good distal taper and nimble tip. Shop made san ma with 115CrV3 steel core and steel cable cladding. Forged to shape and to geometry the bevels are ground on water cooled grinding stone with a satin finish.
